The Rooftop Spritzer

What better antidote to a hot summer day than a berry-infused, wine-boosted popsicle?

Ingredients

SERVINGS: Makes 6 cocktails
  • 1 pint (3 cups) fresh, ripe strawberries, hulled (¼ cup sliced thin, lengthwise and set aside)
  • 1 cup fresh blackberries
  • 1 bottle dry sparkling rosé, chilled

Preparation

Blend strawberries and blackberries together into a smooth purée. Add sliced strawberries and 8 ounces sparkling rosé and stir. Divide mixture evenly between 6 popsicle molds. Freeze for a minimum of 8 hours but preferably overnight for surefire success. To serve, place a popsicle in a wine glass and fill as desired with sparkling rosé.
