- 2 ounces Plantation Three Stars Rum
- 1 ounce freshly squeezed lime juice
- ¾ ounce calendula syrup*
- Sweet William blossoms for garnish
In a bar tin, combine liquid ingredients and shake over ice for 10 seconds. Strain into a cocktail glass. Garnish with Sweet William blossoms.
*Add 1 cup boiling water to ½ cup fresh calendula petals. Add 1 cup granulated sugar, stir gently then steep for 20 minutes. Let cool, fine strain and discard solids. Funnel into a clean bottle. Refrigerate for up to 1 week.
Note: For a full pitcher to serve 10 people, combine: 20 ounces (2½ cups) rum, 10 ounces (1¼ cups) lime juice, full batch (1½ cups) calendula syrup. Pour into a pitcher filled with ice, stir vigorously and strain immediately into chilled glasses. Garnish each glass individually.
