Bite-Sized Pies for Nibblers
Surely it’s not the first business to be inspired by pregnancy cravings, but the “baby pies,” as Providence Pie Company co-owner Sandra Morgan calls them, satisfy anyone’s urge to have a bite of each kind of pie on those holiday tables. And these 2½-inch-round treats are individualized—no more pumpkin filling sliding into the pecan or apple! Sandra and husband, Tom, are both full-time accountants but Tom also wears another hat. He loves to cook and is “obsessed with dough,” so it was a small step from bread and pizza to buttery, flaky piecrust when Sandra was pregnant with their daughter. At local farmers’ markets and pop-ups, they’ve discovered that customers love the mini-pies, one calling the s’mores filling “a spiritual experience.” But Key lime, strawberry rhubarb, “bluebarb,” peach raspberry, berry custard, caramel apple and salted honey are also popular. Fall flavors will include a few of those and also pecan, pumpkin, chocolate cream and cranberry–ginger snap, all also available in nine-inch sizes, too. Pippin Orchards, Earth Care Farms and Providence Honey Company are some of their local suppliers. So ... save room for pie—mini-pies, that is!
