A Kir is a classic French apéritif made by mixing Crème de Cassis (a black currant liqueur) with dry white wine, typically served before a meal. The Kir Royale is a more festive variation using sparkling wine instead of white wine, and both are known for their refreshing, slightly sweet and tart flavor profile.

Ingredients
  

Kir:

  • 1 part Crème de Cassis (a sweet black currant liqueur)
  • 3 parts dry white wine

Kir Royale:

  • 1 part Crème de Cassis
  • 3 parts Champagne or other sparkling wine

Notes

Pour the Crème de Cassis into a white wine glass and gently stir in the cold white wine. Makes 1 cocktail.
Pour the Crème de Cassis into a Champagne flute and gently top with sparkling wine. Makes 1 cocktail.
