Chilled Broccoli Soup

What to do with broccoli florets? Well, if you’re not going to just dip them in ranch dressing (my preferred option), try this recipe for a delicious and nutritious chilled broccoli soup.

Ingredients
  

  • Broccoli florets from 2 medium stalks, about 3 cups
  • 1 medium onion, chopped
  • 3 cups chicken stock or vegetable stock
  • 1 small cucumber, peeled, seeded and diced
  • 1 teaspoon grated ginger (optional)
  • ½ cup plain yogurt, plus more for garnish
  • Croutons, herbs, pickled chilis, olive oil and anything else your heart desires to garnish

Instructions
 

  • Boil broccoli and onion in stock until tender. Let cool, then purée with ginger, cucumber and yogurt. Season to taste with salt and pepper and garnish to add fabulousness.
