Strawberry Rhubarb Sour

Shrubs are helpful tools to add the spark and vibrancy of fresh fruit without an overpowering sweetness. They’re great in cocktails but just as delicious when splashed over seltzer.
 

Ingredients
  

  • 2 ounces Sons of Liberty Gin
  • 1 ounce strawberry rhubarb shrub*
  • 1 ounce egg white**
  • ¾ ounce fresh lemon juice
  • Mint for garnish

Instructions
 

  • Combine liquid ingredients in a bar tin and “dry” shake (without ice) for 15 seconds for froth. Add ice, shake vigorously for 10 seconds and double strain into a chilled cocktail glass. Garnish with fresh mint. Yields 1 cocktail.
    * Strawberry rhubarb shrub: Combine 1½ cups diced strawberries and ½ cup diced rhubarb with 1 cup granulated sugar and 1 cup apple cider vinegar. Cover and refrigerate for 2 days. Fine strain into a clean glass bottle, discarding solids. Refrigerate up to 3 weeks.
    ** Please note, as menus are required to alert you, consuming raw eggs can be risky. We recommend using the freshest pasture-raised eggs. Or use pasteurized egg whites if you prefer.
