Native New Yorker Priscilla Edwards had been missing the Afro-Caribbean juice bars of her hometown, so she decided to open her own in Rhode Island in 2019, called The Glow Café & Juice Bar. She moved here five years ago to coach women’s basketball at Providence College—she herself had played in high school and at St. Bonaventure University. She’d made smoothies for herself as a teen and knew that “by eating better, you perform better.” Edwards also understands that wintertime inspires customers to seek out immune-boosting foods. Glow offers straight juices (celery, carrot) and flavorful blends, including “nutrient-dense” greens—kale and spinach—or “colorful roots”—carrots and beets— either drink sparked with lemon and ginger. There are also fruit smoothies or protein smoothies, the latter with peanut butter, almond milk or hemp protein. The café side of Glow features Jamaican patties (from jerked tofu to curried chicken) and bowls (fruit, granola and chia seeds for “The Classic” or a nod to chocolate fans in the Coco Bowl, with chocolate granola, cacao nibs and blueberries). “We try to incorporate a ‘superfood’ and a ‘sweet treat’ in each bowl,” says Edwards. Look for Glow-Up wellness kits filled with immunity-boosting favorites, too.
