The Dickens

The Dickens is a modern interpretation of one of 19th century’s most popular cocktails, the Sherry Cobbler (sherry, sugar, ice and muddled orange or fruit of the season), plus my addition of reposado tequila and spicy-sweet ginger beer. Sherry is a fortified wine from the region of Andalusia, Spain, made with white grapes. Its styles range from light and dry to dark and sweet, depending on the blend and barrel aging process. Lustau East India Solera Sherry is a sweetened Oloroso sherry with hints of tangy ripe plum, dried dates and toffee that couples spectacularly with the rich peppery notes of aged tequila. Swap the traditional muddled orange for a zestier pang of lime and top with ginger beer to fuse the spicy, earthy and sweet tones of the sherry with tequila.

  • 2 wedges fresh lime
  • 2 ounces reposado tequila
  • 1 ounce Lustau East India Solera Sherry
  • Ginger beer

Instructions

Together, aged tequila and sherry build an incredible wall of rich, earthy complexity. This is one of those four-ingredient cocktails that knocks the ball out of the park.

Muddle 2 lime wedges in a copper mule mug and top with ice, tequila, sherry and ginger beer.
