Garden Sorrel Soda

There is something deeply revitalizing about an icy green garden soda. Stock a batch of this syrup and a bottle of sparkling water in your fridge, and you’ll be ready for all invited (and uninvited) summer guests.

During the summer months, I always like to have a fresh mixer on hand for making sodas and cocktails. You can find this garden sorrel syrup in the door of my fridge from June through September. Sometimes I go full tilt sorrel in this recipe for a clean, tart, green treat, but often I’ll add other kitchen garden herbs like mint, lavender and thyme or sage for nuance. What can I say? I live for variety—especially in the kitchen.

Ingredients

  • 2 ounces Sorrel Syrup*
  • 4 ounces soda water
  • Violet blossom and fresh mint for garnish

Instructions

Fill glass with ice, add sorrel syrup, top with soda water and garnish with fresh mint and a violet blossom. Makes 1 cocktail.

*Sorrel Syrup: Heat 1 cup water with 1 cup sugar over low heat until sugar dissolves. Cool to room temperature. Place 1 cup fresh sorrel leaves, leaves from 4 sprigs fresh thyme, 4 sage leaves, 1 pinch lavender blossoms (optional), 1 cup water in a blender. Blend for 20 seconds, add simple syrup and infuse for 10 minutes. Add 2 ounces lemon juice. Stir and fine-strain into a clean jar and refrigerate for up to 2 weeks.
