Ingredients
SERVINGS: 1 Cocktail
- 2 ounces fennel-infused gin*
- ¾ ounce fresh lemon juice
- 1 teaspoon honey
- 3 ripe strawberries (2 for muddling, 1 for garnish)
- Sparkling wine (or soda) to top
- Strawberry slices, fennel fronds and mint for garnish
Preparation
In a bar tin, add infused gin, lemon juice, honey and 2 strawberries and muddle with a wooden pestle or wooden spoon. Add ice and shake vigorously for 15 seconds; fine strain into a chilled wine glass filled with ice. Top with sparkling wine; garnish with fresh strawberry slices, fennel fronds or mint.
Instructions
*Fennel-Infused Gin Wash, trim and finely slice 1 fennel bulb, with fronds and stalks included. Place in a large Mason jar and cover with 750ml dry gin. Seal jar, store at room temperature; shake once a day for 5 days. Fine-strain infusion, discard solids and funnel into a clean bottle or jar. Best if consumed within 6 months.
