Fennel and muddled strawberries capture the essence of the summer garden in this tart and bubbly spritz. No time for infused gin? Swap in your favorite gin and let the botanicals do the work.

Ingredients

SERVINGS: 1 Cocktail
  • 2 ounces fennel-infused gin*
  • ¾ ounce fresh lemon juice
  • 1 teaspoon honey
  • 3 ripe strawberries (2 for muddling, 1 for garnish)
  • Sparkling wine (or soda) to top
  • Strawberry slices, fennel fronds and mint for garnish

Preparation

In a bar tin, add infused gin, lemon juice, honey and 2 strawberries and muddle with a wooden pestle or wooden spoon. Add ice and shake vigorously for 15 seconds; fine strain into a chilled wine glass filled with ice. Top with sparkling wine; garnish with fresh strawberry slices, fennel fronds or mint.

Instructions

*Fennel-Infused Gin Wash, trim and finely slice 1 fennel bulb, with fronds and stalks included. Place in a large Mason jar and cover with 750ml dry gin. Seal jar, store at room temperature; shake once a day for 5 days. Fine-strain infusion, discard solids and funnel into a clean bottle or jar. Best if consumed within 6 months.
