I love making pear shrub to capture the juicy sweetness of a fruit that’s otherwise hard to capture in cocktails.

Ingredients

  • 1½ ounces Orleans Bitter Aperitif Cider
  • 1 ounce Spiced Pear Shrub*
  • Soda water
  • Fresh thyme sprig for garnish
  • Fresh pear slice for garnish

Instructions

Fill rocks glass with ice, add aperitif, shrub, top with soda water and garnish with pear slice and thyme. Makes 1 cocktail.

Spiced Pear Shrub* 

Core and chop 3 ripe pears and place in nonreactive container with ½ cup granulated sugar, 1 cup apple cider vinegar, 2 cinnamon sticks, ¼ teaspoon fresh grated nutmeg. Stir, cover and store in a dark, cool place for 2 days. Strain solution, pour liquid into a clean bottle and refrigerate for up to 1 year.
