Stackin' Waffles and Chicken Sandwiches
Although his parents were Ghanaian immigrants, Edmund “Eddy Stacks” Addai is a born-and-raised Rhode Islander, with strong family ties to the South and a passion for Southern cooking that he’s determined to share. After graduating from URI in 2017, he had an idea for The Stack House in the Emporium, close to campus, and that dream came true in October 2022. Addai had built up a following with a takeout business in Providence during 2020 and he plans to open a second location in the Charles Street area early next year.
His eatery has certainly become a go-to for “fast food” that includes fried chicken tenders, wings and boneless thighs (in the sandwiches), with more sauces and sides that you can shake a drumstick at. From its beginnings, Stack House has highlighted its panko-breaded chicken with waffles (brown sugar, oatmeal or cornbread) and another side (sweet potato fries, hash browns or coleslaw). And it has sparked its brunch menu with jazzy waffles (strawberry shortcake, bananas Foster) and stuffed French toast (Oreos or strawberry compote).
“Everything we do here is big,” Addai affirms, “being fresh, bold and with lots of style.”
