When chemist Walt Palm was a teenager, working in his father’s Pittsburgh restaurant, he always had the idea that he might later use his family’s recipes to start a business. He began a catering business in 2015 doing just that, to build up some capital to produce his Palm’s Locally Made barbecue sauces. He began by alternating catering one week and sauce-making the next, though he now focuses on just the sauces (his day job is as a laboratory manager with the Narragansett Bay Commission). He achieved organic certification for both his Mojo Honey Heat and Mojo Smoky Love. They are both adapted from the very popular sauce his grandmother served at the restaurant: “The challenge is to pull in the same flavors she achieved, but with organic ingredients,” Palm says. Both feature red pepper flakes, white vinegar, molasses and tomatoes, with honey providing caramelizing possibilities to Honey Heat and a “mellow smoked flavoring with no weird ingredients” in the Smoky Love. Palm branded them Mojo “to bring good vibes to every meal they’re used in.”
