Chilled Broccoli Soup

What to do with broccoli florets? Well, if you’re not going to just dip them in ranch dressing (my preferred option), try this recipe for a delicious and nutritious chilled broccoli soup.

Ingredients

  • Broccoli florets from 2 medium stalks, about 3 cups
  • 1 medium onion, chopped
  • 3 cups chicken stock or vegetable stock
  • 1 small cucumber, peeled, seeded and diced
  • 1 teaspoon grated ginger (optional)
  • ½ cup plain yogurt, plus more for garnish
  • Croutons, herbs, pickled chilis, olive oil and anything else your heart desires to garnish

Instructions

Boil broccoli and onion in stock until tender. Let cool, then purée with ginger, cucumber and yogurt. Season to taste with salt and pepper and garnish to add fabulousness.
