A Quick, Easy and Delicious Summertime Pasta

Did you hear? It’s summer in Rhode Island, and that means one thing: Eat all the corn. Fresh sweet corn season flees so quickly that we corn lovers must grasp any kernel of opportunity that comes our way. On the cob, off the cob, steamed, grilled, or raw: We stalk every chance to enjoy summer’s a-maize-ing corn bounty.

This easy weeknight (or any night) recipe keeps the sweet corn kernels in an almost-raw state, and matches them with ears of a different sort: orecchiette pasta. Magical things happen when corn meets ginger and cream and this dish takes advantage of the combination while still placing the corn at center stage. It requires no house-heating oven and comes together quickly; the prep work can be done in the time it takes the water to boil.
