Vegan Meals Straight to Your Door
Whether you’re looking for a vegan meal for yourself or for a dining companion, they can be hard to find in many restaurants, unless that’s their specialty. The option of vegan home delivery occurred to Dean and Julie Couchey when they moved back to Rhode Island during the Covid lockdown, and SoCo Vedge was born. Dean, a chef who trained at the Culinary Institute of America, and wife Julie have traveled the country and the world, bringing back a love of doing vegan twists on classic recipes: “crabless cakes” with ground chickpeas and hearts of palm; “jerk noodles” with jackfruit taking the place of chicken; “mac ‘n’ cheese” with a sauce of potato, carrots, oat milk, nutritional yeast and a splash of vinegar. Says Julie, “95% of what we serve is from scratch. Even swapping out one or two meals a week [with a vegan option] can make a big difference, for the environment and personal health.” Meals are ordered weekly, with three meals offered either in “classic” single-serving portions or a “lite” size (half the classic size). Fall favorites could be lasagna, with lentil Bolognese; tofu schnitzel or Argentinian empanadas, with seitan “chorizo.” So, find your fresh favorites and Vedge out.
