Bill Kitsilis; his sister, Alexandria Kitsilis Cardoso; and their mother, Christine Kitsilis, own Angelo’s Palace Pizza in Cumberland, which will produce Christine’s spanakopita. “Mom’s [spanakopita] is a little bit different than the traditional,” said Bill. “It’s lighter and fluffier … it’s our number-one-selling appetizer,” said Alexandria.
While the team will make the spanakopita for retail sale in the restaurant, Bill explained, “We’re working with [Hope & Main] to make sure of the branding, packaging and regulatory safety aspects.”
As a member of the Rhode Island Hospitality Association’s executive committee, Bill knew about Dish Up RI and credits the initiative with giving local businesses like Angelo’s Palace Pizza access to supermarkets and doing the invaluable legwork. “It’s a game-changer.”
Blessed to have a supportive community, the 42-year-old restaurant will sell the frozen spanakopita in family-sized portions. “We want people to enjoy our family recipe at home,” said Alexandria.
If all goes well with spanakopita sales, look for Angelo’s shelf-stable marina sauce to be sold in retail markets, too.
