Notable Edibles Pies on the Rise
Everyone has turned to “comfort foods” during these pandemic times, and the cooler seasons add to that craving. Pies of all kinds are trending, and Gina Herlihy is riding that wave, after long dreaming of her own bakery. “Food in my household has always been a way of expressing love,” she remembers, from her childhood as a first-generation Cape Verdean and, later, as a stay-at-home mom of three. She has worked in restaurants since her teens, evolving her tastes and talents along the way. After a five-year stint at Ogie’s Trailer Park, she took the leap, opening PVD Pies in April 2020. She loves turning out from-scratch chicken pot pies (a favorite of her children and her customers); other savory winners are chicken-broccoli Alfredo and an old-fashioned shepherd’s pie. Herlihy’s creativity shines in her sweet treats: Kentucky bourbon, a pecan pie with slivered dark chocolate inside; a piña-colada-coconut custard with caramelized pineapple; and the “Laughing Gorilla,” dark chocolate pudding layered with fresh bananas, toasted pecans and dulce de leche. Holiday pumpkin and apple pies will also be long remembered.
