Steven D’Andrea comes from a large Italian family that does not hold back critiques of food at their table. But the first time he brought a gluten-free lasagne to a family dinner, no one believed him! He’d used the fresh gluten-free (gf) pasta that he’d developed over years of searching for gf pasta for his own health issues. This pasta cooks in two to three minutes, has none of the texture issues of many dry gf pastas and can jump from the freezer into boiling water with the same cooking time. D’Andrea’s Woonsocket-based business, GF Pasta Co., launched on Black Friday 2020, as an e-commerce company, and it is booming. Best-sellers are pappardelle noodles, tiny shell-shaped lumache and elbows. A new line will be dairy-free as well as gluten-free. D’Andrea’s previous experience in start-ups and a family business has him already positioning for wholesale development with brick-and-mortar retailers and grocers, along with product changes, such as different varieties of mac ‘n’ cheese, seasonal items such as stuffed shells and maybe even a gluten-free cookie line.
