“Indian cuisine is … a very complex style of cooking with a lot of chemistry in each spice mix,” said Sanjiv Dhar. “Having a bottle of spice mix takes the guesswork out of it.” Enter Brilliant Curry Mix, a spice mix that Spice Kraft, Inc., developed for Dish Up RI. (Spice Kraft is the parent company of four Indian restaurants owned by Dhar and his wife, Vandana: Rasoi, in Pawtucket; Kabob & Curry in Providence; Chaska in Cranston and Rasa in East Greenwich.) To ensure freshness, the spices are sold in five-ounce bottles. A korma mix, a South Indian curry mix and a stir-fry mix are being developed, and all mixes include recipes. “We’re working with [Hope & Main] … to make sure the name, logo and product graphics are done right.”
With Covid, Dhar realized that this initiative would keep chefs busy when they weren’t able to cook for the public. “I wanted to make sure we could survive and create another opportunity to make sales.”
Down the road, look for prepared frozen foods, such as vegetable masala, from Spice Kraft; Dhar envisions using Hope & Main’s kitchens for those prepared foods.
