The Gemini

The Gemini is the cosmic twin of the pre-Prohibition-era Clover Club cocktail, which is a handsome combination of gin, raspberry syrup, lemon and egg white. (For The Gemini we do away with the egg white.) The Clover Club is named for a men’s club of the same name that met at the Bellevue-Stratford Hotel in Philadelphia from the 1890s through the 1920s. The cocktail gained popularity during Prohibition because the sweet pink raspberry syrup masked unfavorable qualities of bathtub gin.

Luckily we have plenty of quality gin brands to choose from these days, and I’ve fallen for a juniper-forward London dry called Gin Lane 1751 London Dry Gin to create that coquettish balance of citrus, berry and botanicals. To simplify the recipe, I skip the raspberry syrup and muddle fresh raspberries and sugar for a similar effect. Because we still want that appealing froth on top of the drink, I add a splash of sparkling wine to liven the citrus and accent the fresh raspberry.

Ingredients

  • 4 fresh, ripe raspberries
  • 1 teaspoon granulated sugar (extra-fine is helpful here)
  • ½ ounce fresh-pressed lemon juice
  • 2 ounces Gin Lane 1751 London Dry Gin
  • Prosecco (or other dry sparkling wine)
  • Edible blossom for garnish

Instructions

Muddle raspberries and sugar in a bar tin. Add lemon juice, gin and ice and shake for 15 seconds. Strain into a chilled cocktail glass, top with a splash of Prosecco and garnish with your favorite edible blossoms of the season. Makes 1 cocktail.
