Enjoy an Après-Ski Experience Without the Cold Feet with This Savory Winter Tart
I don’t ski. Growing up in a flat, hot state combined with my own innate clumsiness means that I didn’t gain a proclivity for Alpine sports. One thing I do appreciate? Après-ski. Lounging in front of a roaring fire, wearing a cozy sweater, nibbling on something bacon-y and cheesy and washing it down with a glass of racy white wine? Sign me up!
This savory tart brings the après-ski vibes to the weeknight dinner table. It borrows from the classic Alsatian tarte flambé but adds a little New England flair with a tangle of burnished butternut squash ribbons and a drizzle of zippy vinaigrette. Butternut squash is a cold-weather superfood: It’s rich in antioxidants and packs more potassium than a banana. In this tart it serves as a nice foil for the bacon and cheese. Frozen puff pastry makes this tart midweek-friendly but slice it into smaller portions and it becomes a great hors d’oeuvre for any holiday gathering.
