Ingredients
- 2 ounces white rum (we like Real McCoy 3-year-old single blended rum )
- 4 golden cherry tomatoes
- 3 basil leaves, plus 1 for garnish
- 1 ounce fresh lime juice
- ¾ ounce hot honey*
Preparation
In a bar tin, muddle tomatoes, basil and honey until well broken down; add lime juice, rum, ice and shake for 10 seconds. Strain over fresh ice into a rocks glass and garnish with a basil leaf. Makes 1 cocktail.
*Hot honey: Combine 1 cup raw honey, ½ ounce apple cider vinegar and ⅓ cup diced dried hot peppers (Chile de árbol or habanero) in a small saucepot; stir over low heat. Remove from heat just before it simmers to preserve the natural healing properties in the raw honey. Fine-strain and store for up to 1 year in the refrigerator.
