The Land Before Time

My bartending style in a nutshell: Keep it fresh, classic, clean and fun. Add something healthy if the spirit moves you, but don’t overdo it. Kale, arugula or celery leaves will all do the trick in this green cocktail.

Ingredients

  • 2 ounces gin
  • ¾ ounce fresh-squeezed lemon juice 
  • ¾ ounce simple syrup
  • 1 medium leaf dinosaur kale, roughly torn or chopped
  • Small kale leaf for garnish 

Preparation

Fill bar tin with gin, lemon juice, simple syrup and kale, add ice and shake 15 seconds. Strain into a chilled cocktail glass and garnish with a small kale leaf. Makes 1 cocktail.
